| I have been missing one of our regulars, Rocklady, so I contacted her recently. She has been a bit under the weather this winter, but seems to be recovering some now. (Miss you RL). I asked her if it would be okay to post her recipe for quick chicken chili (she shared this recipe with me this fall) which uses a store purchased rotisserie chicken as its base. It is done after only about 30 minutes from start to finish. It is quick, easy to make and delicious. Rocklady also has provided a way to poach your own chicken for this recipe in her added notes at the end. When I make this, especially when I read her additional notes, sprinkled throughout the recipe, I feel as if RL will sit down with me and share a bowl when I get done: Here is a quick chicken chili recipe (Note from RL: have added in here and there from my own experience with this as I make it regularly and freeze leftovers). Quick Chicken Chili Extra virgin olive to coat pan (use one which can hold all ingredients). (1) Rotisserie chicken from the grocery store--peel the skin off, separate meat from bone and save the actual meat for the chili. (1) large onion, peeled and chopped or sliced (2-4) garlic cloves, peeled and chopped (or minced) (2) Ortel Chili Seasoning packs ( Or any brand, but you will need at least an equivalent amount). See note below to make your own mix of chili spices. (1)large can of stewed tomatoes--use liquid and all. (1) regular size can organic corn, drained--have also used frozen Drain: (1) regular size can of red kidney beans (1) regular size can of black beans (1) regular size can of white italian beans You may use whatever you want for beans--the originator liked the color variation of the beans. (1) small (tiny) can of tomato paste (1) regular size can of tomato sauce Additional spices as needed and to taste: Garlic salt, Pepper, or Tabasco Sauce Finishing touches: (1) bag Fritos (or organic tortilla chips) Sprinkle a few in individual bowls before adding chili. I always put them in the bottom of big bowl and then add the chili on top and finish off with whatever condiments you enjoy. Suggested C o n d i m e n t s for topping chili: Shredded cheese, Sour Cream, Guacamole , salsa, sliced onions olives. This is a one pot exercise! To Make Under medium to low heat put olive oil in pot to get warm. Throw in the smooshed garlic and white onion and let them saute until soft . Make sure you put some salt, pepper and tabasco in there just for flavoring. Once onions are soft, begin by adding a large can of stewed tomatoes, corn, and beans. Throw in the chili packs to make sure they dissolve. If it's too thick, pour in small amounts of water or chicken broth to get it to the consistency that you like. (Today's batch was a bit too thick...but you can always make it thinner with the liquids) Next add the tomato sauce and paste . Once everything is all blended and warm, I season a bit more to taste , the throw in the chicken pieces. (The original recipe had me poaching chicken breasts & then slicing them thinly but I found the already cooked rotisserie chicken was like a jack pot to save time!) Leave on low heat & then season again to taste--then you are ready to rock and roll. I am not kidding you-- this should take no more than 30 minutes to prep and prepare. I usually serve it with warm corn bread and a yummy red wine. Rocklady’s Additional Notes: I made with black beans, great northern white beans, red kidney beans, frozen corn. How to Substitute Poached Chicken for Rotisserie Chicken: Also instead of rotisserie chicken (which is much easier), I have also poached 2 chicken breast & about 5 chicken thighs in chicken broth. I added 1+ cups of tomato juice and a bit of water to make more liquidy as that is how I like mine. I put mine over organic tortilla chips and added shredded cheese on top. Suggestions for making your own Chili Season Mix: I did not have the chili package mixes on hand (have since looked in stores and hard to find a good pkg mix for me) so made my own chili mix with a blend of: Cumin, dried parsley, dried onions, onion powder, garlic powder, chili powder, dried oregano, cayenne pepper (little goes a long way) black pepper, salt. Put in an Mexican type or other spices that you like. Additional serving suggestons: Have also had it over rice. Good with a salad. Yum! Yum!
