| pork chops salt & pepper olive oil and/or butter (1Tbsp?) fruit juice salt and pepper some pork chops and brown in butter or olive oil in a skillet. Add 1/4 - 1/2 cup apple, orange or pineapple juice. Reduce heat, cover with lid and simmer 30 to 40 minutes, until done. Remove chops from skillet and reduce liquid and then make gravy. Serve over organic rice (too bad GM rice is very common...). baked or mashed potatoes, or quinoa (rl's recipe is here). I try to always buy organic ingredients (meat, vegetables, butter, milk, and juice etc...) Another note: don't reheat anything in plastic in your microwave. Keep your teflon skillets new, replace them often. (toxins come from plastics and scratched or old teflon). Itwl, ~jonsi

Thanks for sharing this with us!! ![]() Now if we could get Rocklady to post that wonderful side dish recipe of hers.......and 2many to give us his recipe for "cheesy grits", we would have a full course meal!!! | OK guys...you asked for it Here is an alternative grain which is very healthy and I find delicious. Quinoa (pronounced as keen-wah), was a staple of the ancient Incas, who called it the “mother grain”. Check out these sites for the many forms of quinoa & recipes for using – from breakfast cereals, gluten free baking, puddings, pasta, salads, main dishes, side dishes, etc. http://www.quinoa.net/181.html Northern Quinoa Corporation Quinoa can be purchased in bulk or in pre-packaged boxes. If your quinoa has not been pre-washed (which removes the natural bitter saponin coating), then place the quinoa in a sieve and run water over it and rinse thoroughly. The Basic Quinoa Recipe This light and wholesome grain may be prepared quickly and easily with this basic method. 2 cups water (or chicken broth or vegetable broth) 1 cup quinoa Place pre-washed quinoa and liquid using one of following methods: (I have only used the energy saving method) Energy saving method, combine liquid & quinoa in a saucepan. Bring to a full boil for 5 minutes, and then set aside, covered for 15 minutes. Stovetop method, Using same proportions, bring to a boil. Reduce to a simmer, cover and cook until all the water is absorbed (about 15 minutes). You will know that the quinoa is done when all the grains have turned from white to transparent, and the spiral-like germ has separated. Makes 3 cups. To prepare in a rice cooker, simply treat quinoa like rice. Add two parts water to one part quinoa, stir, cover (unlike rice you can stir quinoa a few times while cooking to prevent burning in the bottom of the pan) and when the cooker shuts off, the quinoa is done. To prepare in the microwave, NOT RECOMMENDED add two parts water to one part quinoa in a microwave safe bowl. Cover and heat on high for 8 minutes, then remove from heat and stir. Heat again for an additional 4 minutes. Stir and let stand for 1 minute before eating. Repeat if necessary heating 2 mnutes more at a time. QUINOA PILAF – I used 1 cup quinoa and 2 cups organic chicken stock and proportions were fine for the following amounts of other ingredients. 1/2 cup carrot, diced 6 cups quinoa, cooked (basic recipe) 1/2 cup green onion, diced 1/4 cup olive oil or butter 1/4 cup celery, diced 2 cloves garlic, crushed 1/4 cup green pepper, diced 1 cup almonds, sliced 1/4 cup sweet red pepper, diced 1/4 tsp oregano salt to taste Sauté vegetables in olive oil or butter until clear, yet crisp: stir in oregano. Add sautéed vegetables to cooked, hot quinoa, mixing well. Add salt to taste. Dry-roast almonds in heavy skillet until lightly golden. Add almonds and mix. Serves 6-8. I have added sugar peas in their pods also. I have used the thin sliced almonds and also the dry roasted thin sliced almonds..did not bother with dry roasting them myself. Quinoa pilaf served as a side dish with fish or chicken is delicious. Vary the pilaf using your favorite vegetables, or by cooking the quinoa in chicken, fish or vegetable stock instead of water. |

| Another yummy (imho) way to use quinoa - this one off the box ( Trading at Joe's) brand of organic quinoa. Garlic Chicken Stir Fry with Quinoa, Peppers, & Basil Prepare 1 cup quinoa with 2 cups organic chicken stock using one of the basic quinoa prep methods in previous post. 1 1/2 lbs of boneless, skinless organic chicken breasts 5 garlic cloves, sliced or chopped thinly 1 small onion, thinly sliced or chopped (could use leeks, green onions, sweet onions, etc) 1 red bell pepper, seeded & thinly sliced or chopped 1 yellow bell pepper, seeded & thinly sliced or chopped 4 Tbls olive oil 20 leaves of fresh basil Grated Parmesan Cheese Salt & pepper to taste Cut chicken into 1-inch pieces. Heat large skillet over high heat and add the oil. Add chicken and saute for 5 minutes or until golden brown. Add onions, bell peppers, saute for one or two more minutes, add the garlic and saute until peppers become slightly limp, but still bright, about one to two minutes. Season with salt & pepper. Remove pan from heat, add basil and quinoa. Toss until basil wilts, garnish with parmesan cheese. Serves 4. Try varying the vegetables to suit your tastes. I have also added in the sugar snap peas in their pods to this...think asparagus might be good too. Hope you enjoy it as much as I do. |
